     Recipe of the Week
Pasta Rustica

Ingredients
2 tbsp olive oil
large onion
1 tsp garlic, minced
2 carrots, peeled and diced
2 tbsp basil, chopped
2 zucchini, diced
1 cup chicken broth
2 cups cannellini beans, cooked
3/4 pound penne pasta
1/2 cup parmesan, grated
Directions
Heat the oil in a large coup pot. Add the onion, garlic and carrots. Cook until just soft. Add the tomatoes, basil, zucchini and broth. Cover and simmer for 10 minutes. Add the beans adn cook for 5 minutes longer. Cook and drain the pasta. Toss in the cheese. Place in bowls and top with the vegetable sauce.
