First, you need to make Sushi Rice.
Bring water and rice to boil in a 2-qt. Saucepan with tightly fitting lid. Reduce heat, cover and simmer until all liquid is absorbed, about 15 minutes. Allow rice to stand for 10 minutes.
Place vinegar, sugar and salt in small saucepan. Heat slowly until salts and sugars dissolve. Place hot cooked rice in a wide, shallow glass bowl (not metal). Toss rice gently with vinegar mixture using wooden spoon. Do not stir. Use to make sushi rice.
Then, get out a bamboo rolling mat, and place nori on it. Cover the nori with a layer of sushi rice, leaving the top inch free of rice. Place filling in the center of the rice, parallel to the bamboo in the mat. Carefully roll up the nori, so it is log shaped. moisten the nori edge without rice on it, and attach it to the outside of the roll. Dip a sharp knife in a glass of water and vinegar. Slice the sushi log one slice at a time, dipping the knife in the glass after every cut. Arrange on a plate. YUM!
For vegetarian sushi, try the following combinations for fillings:
Pickled ginger, avocado, cucumber and carrots
Portabello mushrooms sautéed in tamari or soy sauce, carrots, and green onions
Pickled ginger, baked tofu, carrots, and cucumber
You will need:
2 cups Sushi Rice
3 cups water
2 tbsp. Ume plum vinegar
1 ½ tbsp. Sugar
1 tsp. Salt
