1.5 c. TVP 1.5 c. boiling water 2 t. olive oil 2 med. onions, chopped 2 cloves garlic, minced 1 green bell pepper, chopped 1 red bell pepper, chopped 1/2 t. crushed red pepper flakes 2 (15oz) cans black beans, rinsed and drained 1 (16oz) can tomato sauce 4 T. chili powder 2 t. ground cumin 1 t. salt, or to taste In a medium bowl, cover TVP with boiling water. Stir in beef boullion if desired. Let stand until liquid is absorbed, about 15 minutes. It will look like cooked oatmeal. Meanwhile, heat oil in large skillet; add onions and garlic. Cook slowly over med-low flame until onion is translucent, about 5 minutes. Add peppers; saute 1 minute. Add TVP, beans, tomato sauce, chili powder, cumin and salt. Bring to a boil, reduce heat and cover. Simmer until thick, about 15 minutes. Serves 4 generously. Seasonings can be adjusted for desired heat.
