COOKIES


BROWNIES
1 C. margarine or butter(softened)
1 C. white sugar
1 C. brown sugar
3/4 C. cocoa
3 lg. eggs
1 C. flour
1 1/2 tsp. baking powder
1 1/2 tsp. vanilla
1 C. chopped walnuts (optional)
1.  Cream butter or margarine with sugars and cocoa.
2.  Add eggs.  Mix well with mixer.
3.  Add remaining ingredients.  Mix well.
4.  Pour into 9X13 baking pan which has been sprayed with non stick spray. 
5.  Bake at 350 degrees for 30 minutes.

KITCHEN SINK COOKIES
1 cup margarine
1 cup shortening
2 cups white sugar
2 cups brown sugar
2 Tsp. vanilla
4 eggs
2 Tsp. baking powder
2 Tsp. baking soda
4 cups flour
1 cup pecans
1 cup coconut
2 cups oatmeal
1 cup raisins
12 ounces chocolate chips
2 cups corn flakes

1.  Cream together margerine, shortening, and sugars. 
2.  Add vanilla and eggs. 
3.  Sift in the baking powder, baking soda, and flour. 
4.  Add the pecans, coconut, oatmeal, raisins, chocolate chips, and corn flakes. 
5.  Roll dough into balls 1 1/2" diameter. 
6.  Bake at 360 degrees about 15 minutes.
 When cool, cookies should be chewy, not brittle. (Brittle cookies mean you baked them too long)


CHOCOLATE CHIP COOKIES
1 C. margarine
1 C. granulated sugar
1 C. brown sugar
2 eggs
1 tsp. vanilla
2 C. flour
2 1/2 C. ground oatmeal (grind oatmeal into a powder in blender)
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
12 oz. chocolate chips
1 1/2 C. chopped nuts (optional)
1.  Cream together the margarine and the sugars.
2.  Add eggs and vanilla.
3.  Add ground oatmeal, flour salt, baking powder and baking soda.  Blend well.
4.  Add chocolate chips and nuts (if using).  Roll heaping teaspoon dough into a ball.
     Place on ungreased cookie sheet.
5.  Bake at 375 degrees for 12-15 minutes, depending on the size of the cookies 
    (or until lightly browned).  Cool a couple minutes and remove cookies to a cooling 
    rack or flat surface.  (If you don't remove cookies from cookie sheet after a couple 
    minutes, they may stick.)
   *Makes 3-5 dozen depending on the size of the cookies.  You can make a few at a time, 
    and refrigerate the rest of the dough in an airtight container for up to several days. 
    If you are baking them all at once, after cooling, I place them in a zip lock bag and 
    refrigerate.  If you prefer that "just out of the oven" taste, heat your cookie in a 
    microwave for 5-10 seconds.

YUMMY OATMEAL COOKIES
1 pkg. boxed yellow cake mix
2 C. quick cooking oats
1 C. sugar
1 C. oil
2 eggs
1 C. chopped pecans
1 1/2 tsp. vanilla
raisins or chocolate chips as desired (optional)
1.  Preheat oven to 375 degrees.
2.  In a large bowl combine dry ingredients.
3.  Add wet ingredients to dry ingredients.
4.  Mix well  until all of dry ingredients are incorporated into wet ingredients.
5. Shape dough into 1 - 1 1/2 inch balls.  Place 2 inches apart on baking sheet.
6.  Bake 15-17 minutes.
7.  Cool on wire racks.
Yield:  about 5 dozen cookies.
