Nova Scotia Recipes
Here are a few traditional recipes that can be found in most maritime kitchens. Enjoy!
Brown Bread
Ingredients:
- 3/4 cup rolled oats
- Shortening, size of an egg
- 1 1/2 cups boiling water
- 1/3 cup molasses
- 1 tsp. salt
Mix above ingredients in large bowl, let stand until warm. In the meantime, mix:
- 1/2 cup warm water
- 1 tbsp. yeast
- 1/2 tsp. sugar
When yeast has risen to the top, add it to the first mixture, mixing well. Then add :- 4 cups of all purpose flour
Dough will be very heavy by this time. Turn out onto floured surface and knead 10 to 15 minutes. Place in bowl, cover with tea towel and leave in warm place to rise. When dough has doubled in bulk, knead 10 to 15 minutes again, form into oblong shape and place in bread pan. Re-cover, let rise again until doubled in bulk. Bake at 350 F for one hour. Makes one large loaf.
Baked Beans
Ingredients:
- 2 cups dried beans
- 1/3 cup salt pork, diced
- 3 tbsp. brown sugar
- 3 tbsp. molasses
- 1 tsp. salt
- 1/2 tsp. mustard
- 1 medium onion, diced
- 2 tbsp. ketchup
- dash of black pepper
- water
Soak beans in water overnight. In morning, drain off soaking water, put beans in casserole dish and add all the ingredients. Cover with boiling water. Bake in slow oven (250 F) for 6 to 8 hours, adding more water if needed. (Hint: To save on baking time, drain off soaking water and cover with fresh. Boil on stove for half hour before adding remaining ingredients and baking.)
Fish Chowder
Ingredients:
- 1 pound Haddock fillets
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 2 cups diced potatoes
- 1 pint cream
- 1 pint milk
- 1 grated carrot
- 1/3 cup butter
- salt and pepper to taste
Cut fish into bite sized pieces. Cook potatoes, onions, and celery for 10 minutes in a small amount of water. Add fish and simmer until cooked, about 5 to 8 minutes. Slowly add cream and milk. Reheat, but do not boil. Season to taste. Add butter and garnish with grated carrot.
Serves 4.
Blueberry Cake
Ingredients:
- 2 cups flour
- 1 tsp. salt
- 1/2 cup shortening
- 1 cup blueberries (preferably wild)
- 1 tsp. vanilla
- 3 tsp. baking powder
- 2 eggs
- 1 cup white sugar
- 3/4 cup milk
Cream sugar and shortening, add eggs and beat well. Add milk and vanilla, then dry ingredients, mixing well. Lastly, add blueberries and milk, carefully so that the blueberries don't get crushed too much. Pour into 9 x 9" pan. Bake 375 F for 35 to 40 minutes. Serve warm with ice cream or whipped cream.
Apple Crisp
Ingredients:
- 4 cups sliced apples
- 1 tbsp. lemon juice
- 1/3 cup sifted flour
- 1/2 cup melted butter or margarine
- 1 cup oatmeal
- 1/2 cup brown sugar
- 1 tsp. cinnamon
Place apples in greased shallow 8 x 8 baking dish. Sprinkle with lemon juice. Combine dry ingredients, add melted butter and mix until crumbly. Sprinkle on top of apples. Bake 30 min. in 375 F oven. Can be served hot or cold, garnished with whipped cream.
Gingerbread
Ingredients:
- 1/2 cup sugar
- 1/2 cup shortening
- 1 egg
- 1 cup molasses
- 1/2 tsp. salt
- 1 tsp. ginger
- 1/2 tsp. cinnamon
- 1/2 tsp. cloves
- 2 1/2 cups flour
Mix all ingredients in order given. Last, add one cup of boiling water with 1 1/2 tsp. of baking soda dissolved in it, and mix well. Pour into 9 x 13" pan and bake in a 350 F oven for 40 minutes. May also be served warm with whipped cream.
Sweet 'N Sour Meatballs
Ingredients:
- 1 cup brown sugar
- 3/4 cup water
- 1 cup ketchup
- 1 medium onion
- 3/4 cup cider vinegar
- 1 Tbsp. dry mustard
- 2 lbs. hamburger
Dice onion and mix with hamburger. Form meat into 1" balls. Place in greased baking dish. Mix remaining ingredients and pour over top. Bake uncovered in 350 F oven for 40 minutes, basting occassionally. The sauce may be thickened with flour and water when done. Serve hot over rice.
Christine's Grampie's Baked Beans
This recipe was given to me by Christine, a fellow Bluenoser and a friend of mine. Her Grampie told it to her over the phone just as it appears below:
Ingredients:
- Baked Beans
- Kidney Beans (in water)
Cook until soft (keep covered with water) and do not drain.
Sauce for Beans
- 1 cup brown sugar
- One onion, cut fine
- 1/2 block margarine
- salt
- pepper
- 1/4 to 1/2 cup molasses
- Ketchup (squirt)
Bake at 375 F. (He didn't say how long - keep testing them!) They sound good, Christine! Thanks for the recipe!
