Our Star Wars Lego Creations
Here's a B-wing built entirely from parts in the X-wing Lego set. It features opening/closing foils, and a 360 degree rotating cockpit (like the "real" thing). The downside to the rotating cockpit is that it's not very solid. Extracting the pilot without utmost care may result in complete disintegration.

Finally, a T-16 Skyhopper, built entirely from parts in the Snowspeeder Lego set. It seats two, and carries the optional armament for a T-16.
