OUR FAVORITE RECIPES
I love to
cook and so do the kids. We're always trying out something new.
But I thought I share some of our perennial favorites & some of the
recipes the kids have enjoyed the most.
Main Dishes
Apple

1 egg
1/2 c. milk
1/4 c. salad
oil
1 c. grated
apple
1 1/2 c.
flour
1/2 c. sugar
2 tsp. baking
powder
1/2 tsp.
salt
1/2 tsp.
cinnamon
Grease bottoms of muffin cups & heat oven to 400 degrees. Beat egg; stir in milk, oil & grated apple. Mix in remaining ingredients until flour is just moistened. The batter should be lumpy. Fill muffin cups 2/3 full. Sprinkle with nut-crunch topping: 1/3 c. (packed) brown sugar, 1/3 c. ground walnuts & 1/2 tsp. cinnamon. Bake 25 to 30 minutes.

2 Tbsp. cornstarch
1 c. water
4 cs. fresh/frozen
blueberries
Pancakes:
2 c. all-purpose
flour (I usually substitute 1 c. oat flour for nutrition)
1/4 c. sugar
4 tsp baking
powder
1/2 tsp.
salt
2 eggs
1 1/2 c.
milk
1 c. sour
cream
1/3 c. margarine,
melted
1 c. fresh/
frozen blueberries
In med. saucepan, combine sugar & cornstarch. Gradually stir in water. Add blueberries & bring to boil over medium heat. Boil for 2 minutes, stirring constantly. Remove from heat; cover and keep warm.
Mix dry ingredients. Beat eggs in seperate bowl & add to dry ingredient, mix well. Add moist ingredients & mix well. Fold in blueberries. I don't really have to tell you how to cook the pancakes, do I?
CRANBERRY SWEET POTATO MUFFINS
1 c. white
flour
1/2 c. oat
or rice flour
1/2 c. sugar
2 tsp. baking
powder
3/4 tsp.
salt
1/2 tsp.
ground cinnamon
1/2 tsp.
ground nutmeg
1 egg
1/2 c. milk
1/2 c. plain,
mashed sweet potatoes
1/4 c. margarine,
melted
1 c. Craisins
(or fresh when in season)
Combine all
dry ingredients in large bowl. In small mixing bowl, combine egg,
milk, sweet potatoes and margarine; then stir into dry ingredients just
until moistened. Stir in cranberries. Fill greased or paper
lined muffin tins half full. Sprinkle with sugar/cinnamon mix if
you like. Bake at 375 for 18-22 mins.
1/2 banana
yogurt -
strawberry or vanilla
Rice Krispies
popsicle
sticks
Cut bananas
in half, insert popsicle stick in the bottom and roll them in the yogurt.
Then roll in the Rice Krispies. Freeze for 1 hour. I've fooled
my daycare kids into thinking this is an ice cream snack!!
