I like to cook (and eat,
too). So, I'd like to share some favorite meals. This
entry is a winter warmer, upper. So, fix yourself a big
pot of bean soup. Grab a chunk of cornbread and like the
little dog on the left says "Let It Snow" Bean Soup
1# dry navy beans
A large meaty ham shank or smoked picnic
1/2 cup chopped onion
1/2 cup chopped celery
1Tb salt
1/2tsp black pepper
2 bay leaves
Rinse the beans in cool water.Put them in a large pot and
cover with water. Bring to boil. Boil for 2 min. Remove
from heat and cover. Let stand 1 hr. Add remaining
ingredients and enough water to cover the beans by 1 or 2
inches. Simmer until the meat is easily pulled from the
bone. Remove shank and cut all meat off the bone. Put
meat back in pot and cook soup until it is desired
consistency. Remove the bay leaves as most family members
get irate when they bite into one and guests don't know
how to get rid of it gracefully.
I like to serve bean soup with homemade
cornbread
Easy Cornbread
2 eggs
1 cup milk
1/4 cup oil
1+1/2 cups yellow corn meal
1 cup all purpose flour
1/2 cup sugar
3 tsp baking powder
1 tsp salt
Heat oven to 450° . Grease a 9" square pan. In large bowl
mix all ingredients. Pour into greased pan. Bake for
20-25 min. A toothpick stuck in the center should come
out clean. Serve warm with lots of butter.
