AUNTIE FRAN'S WALDORF SALAD
The holidays wouldn't be complete at our house with this salad.
6 c. chopped apples, peeled (if using red apples I leave a
little skin on for color)
2 c. chopped celery
2 c. chopped walnuts
1/2 to 3/4 c. mayonnaise
1 T. milk
1 T. sugar
Mix sugar and milk into mayonnaise. If using salad dressing, rather than mayonnaise, omit sugar. Combine all ingredients. Refigerate for a few hours to chill thoroughly. You may need to add a little more mayonnaise after the sits awhile. Serves 8 - 10 people.

2-8 oz. pkgs. cream cheese
3/4 cup sugar
2 eggs
1 teaspoon vanilla
Vanilla Wafers
Beat all ingredients with electric mixer until smooth. Place 1 Vanilla wafer in the bottom of a foil baking cup. Fill 3/4 full with cream cheese mixture. Bake at 375 for 10 minutes. To serve, top with pie filling (cherry, blueberry, pineapple, etc.) or leave plain. As I recall, this recipe makes about 3 dozen cheesecakes.
PUMPKIN MUFFINS from AMOM_Leesa of the Moms Online Chat
3 c. flour
1/2 tsp. cloves
1/2 c. water
1 tsp. salt
1/2 tsp. nutmeg
1/2 c. oil
1 tsp. baking soda
2 c. sugar
1 c. chopped nuts
1-1/2 tsp. baking powder
3 beaten eggs
3/4 tsp. cinnamon
1-1/2 c. or 1 can pumpkin
1-1/2 c. raisins
Mix together all ingredients. Fill greased muffin tins 2/3 full. Bake at 400 for 15 min. Makes about 30 muffins.
WHITE CHOCOLATE PECAN MOUSSE PIE by Shannon of Moms Online Chat
1 10" pie crust (chocolate graham wafer is nice)
2 tablespoons butter
2 cups chopped pecans
1 cup vanilla milk chips or white baking chocolate
1/4 cup milk
2 cups whipping cream
1/3 cup sugar
1 teaspon vanilla
Melt butter in skillet over medium heat. Stir in pecans. Cook until golden brown, about 6 minutes, stirring constantly. Cool at room temperature for 1 hour.
In small saucepan over low heat(or double boiler) melt chocolate with milk, stirring constantly. Cool at room temperature for 1 hour.
In large bowl, beat whipping cream untill stiff peaks form. Fold in sugar, pecans and melted vanilla milk chips. Spoon into cooled crust. Refrigerate 4 hours before serving.
Garnish with grated chocolate or chocolate syrup.
For speed, microwave vanilla chips and milk let cool.
I mix 8oz cream cheese,sugar and vanilla- add in cooled nuts and white chocolate mixture and then fold in whipped cream - pour into cool crust. Easy Easy!!

30 min. preparation, 15-20 min. baking
*Filling:
1-1/4 cups granulated sugar
1/2 cup firmly packed light brown sugar
1-1/2 tablespoons cornstarch
4 cups pitted, fresh or frozen, thawed cherries
1/2 cup water
2 teaspoons grated lemon or orange zest
1/2 teaspoon vanilla or almond extract
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
*If you are rushed for time, you can substitute canned pie filling.
Pastry
8 sheets phyllo pastry, thawed if frozen
3 tablesoons butter, melted
Topping:
1 tablespoon confectioners' sugar
1. To prepare filling, in a medium saucepan mix together granulated sugar, brown sugar, and cornstarch. Stir in cherries, water, lemon zest, and vanilla. Cook over medium heat until bubbling and thickened.
2. Reduce heat to low, add allspice, and cinnamon and cook, stirring occasionally, for 15 minutes. Remove pan from heat. Cool completely.
3. Preheat oven to 400 F. Grease a baking sheet.
4. To prepare pastry, unfold sheets of phyllo so they lie flat. Stack 4 sheets on plastic wrap. Brush to sheet with 1 tablespoon melted butter. Keep reamaining sheets covered with plastic wrap and damp cloth to prevent them drying out.
5. Spread half filling along a short side of top pastry sheet. Starting with short side and using plastic wrap as a guide, roll up pastry, jelly-roll style. Fold ends under.
6. Place strudel, seam-side down, on prepared baking sheet. Brush with 1/2 tablespoon melted butter. Repeat with remaining phyllo, melted butter and filling to make second strudel.
7. Bake until golden, 15 to 20 minutes. Transfer baking sheet to a wire rack to cool for 15 minutes. Transfer strudels to a cutting board to cool completely. Sprinkle with confectioners' sugar. Cut diagonally.
Makes 10 servings
CLUMSY'S FAMOUS CHEESE CAKE from Clumsy of the Campfire Chat
Crust -
2 pkgs of Graham Crackers (if 3 pks to a box)(I use the Cinnamon ones myself)
3 tablespoons sugar
2 teaspoons cinnamon
1 stick & 2 tablespoons melted butter
Roll graham crackers very fine. Add sugar and cinnamon and mix.
Combine with melted butter and then line bottom of 9"x13" cake pan with it to make the crust.
Filling -
3 - 8 oz. pkgs. Philadelphia Cream Cheese -- beat well
1 cup sugar- add gradually
3 eggs - add 1 at a time and beat well
1/2 teaspoon vanilla - add last.
Pour over crust and bake 20 minutes at 375 degrees.
Topping -
1 pint Sour Cream - whip lightly
3 tablespoons sugar - add
1/2 teaspoon vanilla - add
Pour carefully and smooth over BAKED cake. Bake 5 minutes at 500
degrees. Let cool and chill before serving.
