BAKED BRISKET
One brisket 3 to 4 pounds
l pkg. au jux, or onion soup
3/4 Cup water
1/4 Cup wine
1/2 onion, sliced
Lay brisket in heavy foil in pan.
Mix pkg au jux, or onion soup,
with water and wine. Pour over meat,
add sliced onion. Cover tightly.
Bake 350 for about 3 hours, depending on
size, and how well done you want it.
FIFI'S CRANBERRIED CHICKEN
Mix…..
1 can whole cranberry sauce
3/4 C. French Dressing
l pkg onion soup
1 tsp soy sauce
2 cut up chickens
Pour over chicken and let marinate for at least an hour,
or put in food bag and freeze till ready to use.
Put into pan.
Bake covered 1 1/2 hours. Uncover 1/2 hour.
Cut in half for one chicken.
(No browning necessary)
CHICKEN WITH WINE
l fryer
Season salt
1/4 C. wine (any kind)
1 whole onion
Put season salt on chicken and brown the chicken.
Set aside and brown one cut up onion.
Put chicken in flat casserole dish.
Cover with wine, top with really browned onion.
Bake uncovered for about an hour at 350...
The onions should be really dark brown delicious.
BAKED BEANS
2 cans Van de Camp Pork and Beans
2 T. minced onions, browned in margarine
1/2 C. ketchup
1/4 C brown sugar
2 tsp. dry mustard
Mix all with Pork and Beans in a 1 1/2 qt. greased casserole.
Mix well.
Cover and bake 350 for 30 minutes.
VEAL SCALLOPINI
veal steak, thin coat with 2 Tbsp. flour
Brown in 2 Tbsp butter, l clove pressed garlic
Sauce:
1 8 oz can tomato sauce
1/2 tsp. oregeno
2 Tbsp. packaged onion soup mix
1/4 C. water
1/4 C. sherry
Simmer 5 minutes.
Add veal to pan. Cook on low l hour, or till tender.
Serve sprinkled with
grated parmesan cheese on a heated platter.
MEXICAN CHICKEN
6 chicken breasts, cooked and torn into pieces
1 dozen tortillas, torn into pieces
Sauce:
1 small can sliced olives and juice
1 small can Ortego chilis
1 can cream of mushroom soup
1 can cream of chicken soup
1 Cup milk
~Mix together.~
Grated jack or cheddar cheese, about 2 cups.
Less if desired
Put a layer of torn tortillas in 9x12 casserole dish-
Then a layer of torn chicken,
half of the sauce, and half of the cheese.
Make 2 layers.
Top with remaining cheese.
Marinate 8 hours in fridge.
Bake 1 1/2 hours, 300 degrees, covered.
DEVILED SWISS STEAK
l C. sliced onions
l clove garlic, crushed.
Saute in oil till golden brown.
1 1/2 lbs round steak.
Cut in 3 x 2 pieces--dredge in seasoned flour.
Saute in skillet with onions until well browned.
Sauce:
Mix together:
2 C canned tomatoes
l C water
2 T. worc sauce
1 T dry mustard
1 T brown sugar
pinch of salt, pepper, paprika
Pour over meat in skillet. Simmer about 1 1/'2 hours,
or till meat is tender.
SCALLOPED POTATOES
4 potatoes, sliced thin
2 cups Tillamook cheese,
grated cracker crumbs, butter
2 Cups milk
1 tsp. Lawry's seasoned salt
Put layer of potatoes in casserole dish.
Add seasoning to each layer.
Layer with cheese, cut up margarine. and crumbs.
Makes 3 layers. Top with milk.
Bake uncovered umtil milk boils up and covers cheese.
(You can do this in microwave)
Put in 350 oven for 1 1/2 hrs.
