Meat Loaf


Serves 8 to 10

1/2 cup dry red wine

1 1/2 pounds very lean ground beef

8 slices white or whole weat bread

1/2 pound ground pork

1/2 pound bulk italian sausage
links are ok removed from casing

1/2 bunch fresh minced parsley

1 cup milk

1 medium yellow onion 5 oz..grated

3 TBS minced fresh basil or 1 1/2 TBS dried

1 extra large egg, lightly beaten

2 tsp salt

1/2 tsp black pepper

Preheat oven to 375 Deg
In large bowl soak bread in the wine 10 min
Remove bread, squeeze dry with hands saving the excess
Combine all meats and other ingredients
then add bread and wine, blend thoroughly
Shape into a 6 x10 inch loaf and place in a
9 x 13 baking pan. Rub the loaf with 1/4
water to make it smooth and add moisture while cooking
Bake about 1 hour allow to cool 10 mins before slicing
