Orange Marmalade Sauce

  • 1 cup orange marmalade
  • 1/4 cup light corn syrup
  • 1/4 cup vinegar
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground ginger
  • Dash of cayenne pepper

    Microwave at medium till marmalade is melted. Makes 1 1/2 cups.

    Spicy Sesame Sauce

  • 3 tablespoons dark sesame oil
  • 2 tablespoons minced garlic
  • 2/3 cup rice wine vinegar
  • 2/3 cup shoyu (soy)
  • 1/2 cup granulated sugar
  • 1 teaspoon ground Szechuan peppercorns
  • 2 1/4 teaspoons hot chili oil or more
  • 2/3 cup tahini (sesame seed paste)

    In small saucepan, heat sesame oil and saute garlic briefly. Add vinegar, shoyu, sugar, Szechuan pepper and hot chili oil. Bring to a boil, reduce heat and simmer 1 minute. Stir in tahini and simmer an additional 5 minutes. Serve hot.

    Chocolate-Zinfandel Sauce

  • 3 whole cloves
  • 6 black peppercorns
  • 1 teaspoon cumin seed
  • 1/2 teaspoon cardamom
  • 2 cups Zinfandel
  • 2 tablespoons packed brown sugar
  • 1 cup dried ritted cherries
  • 1 ounce unsweetened chocolate, chopped
  • 4 tablespoons butter
  • 1 two-inch cinnamon stick
  • 1/2 cup beef stock

    Toast cloves, peppercorns, cinnamon, cumin seed and cardamom in a heavy saucepan, simmering about 3 minutes, till hot and aroma released. Add Zinfandel and brown sugar; simmer until reduced by half, about 20 minutes. When Zinfandel is reduced, remove from saucepan from heat and add cherries. Let soak while preparing the rest. In a small saucepan melt chocolate and butter. Whisk the beef stock into the chocolate and heat. Add spiced zifandel and keep warm till served. Good on grilled meats like lamb and chicken.

    Red Pesto Sauce

  • 1/2 cup oil packed sun-dried tomato
  • 1/2 cup pine nuts
  • 1/2 cup olive oil
  • 3 cups fresh basil
  • 3 garlic cloves
  • 1/2 teaspoon salt
  • 1/2 cup grated Ramano cheese
  • 1/4 teaspoon ground pepper

    Drain and chop tomato, process all in a food processor.

    Teriyaki Sauce

  • 1 cup shoyu-kikkoman
  • 5 tablespoons Sugar
  • 2 cloves garlic, crushed
  • 1 piece ginger, crushed
  • 5 tablespoons ketchup
  • 2 tablespoons sake or sherry wine
  • salt to taste

    Mix together.
