Title: Swamp Punch

Yield: 10 Servings
2 c Boiling water
1 lg Pkg lime-flavor gelatin
2 c Cold orange juice
1 l Cold seltzer
Ice cubes
1 pt Orange sherbet; slightly
-softened
1 Orange; thinly sliced
1 Lime; thinly sliced
Stir boiling water into gelatin in large bowl at least 2 minutes until
completely dissolved. Stir in orange juice. Cool to room temperature.
Just before serving, pour into punch bowl. Add cold seltzer and ice
cubes. Place scoops of sherbet and fruit slices in punch.

Irish Whisky Cream Liqueur
4 Egg yolks
14 oz Sweetened condensed milk
10 oz Cream
3 T Chocolate-flavoured dessert Topping
2 t Coconut essence
15 oz Whisky
Beat the egg yolks until thick and creamy. Stir in the condensed milk,
cream, chocolate topping, coconut essence and whisky. Mix thoroughly
and bottle. Store up to 3 weeks in the refrigerator.

Strawberry Daiquiri

1 oz Rum
1/2 oz Strawberry liqueur
1 oz Fresh lime juice
2 oz Frozen strawberries; in syrup
1 ts Sugar
Cracked ice
2 Strawberries
1 Orange slice
Recipe by: Joe Robertson
Fill a mixing glass with cracked ice. Add rum, strawberry liqueur,
lime juice, frozen strawberries, and sugar. Shake and strain into a
chilled cocktail glass. Garnish with strawberry and orange slice.

Title: Fruit Shakes

1 Medium banana
1/2 c Quartered strawberries
1/2 c Pineapple or mango cut into
Chunks
3/4 c Orange juice
1 c Ice
Put all ingredients into blender; puree until very smooth and thick.

Title: HOT WHITE CHOCOLATE

Yield: 2 Servings
1/4 lb White chocolate
1/4 c Brandy or rum
1/4 ts Vanilla extract
2 Egg yolks
1 pt Milk
PLACE CHOCOLATE, BRANDY and vanilla in the top of a double boiler
filled with boiling water, place over medium heat and cook until
chocolate is melted. Remove from heat, but leave melted chocolate in
the double boiler. Add the yolks and mix until incorporated.
Meanwhile, place milk in a small pot over medium heat and scald it.
Immediately remove from heat and slowly pour over the melted
chocolate, stirring constantly. Pour into mugs and serve immediately.

1 c Butter
1 c Brown sugar
1/2 c Sifted fruit sugar
1 t Ground nutmeg
1 t Ground cinnamon
2 c Vanilla ice cream, softened
Rum
Boiling water
In a small mixing bowl, beat together butter, both sugars and spices
until well combined. Beat in the ice cream. Turn into a 4 cup freezer
container. Seal and freeze. To serve, spoon about 1/3 cup mix into a
mug, add one jigger of rum and 1/2 cup boiling water. Stir well.

Title: CHOCOLATE PUNCH

4 1-oz sq semisweet chocolate
1/2 c Sugar
2 c Hot water
2 qt Milk
1 1/2 ts Vanilla extract
1 qt Vanilla ice cream
1 qt Club soda
1/2 pt Heavy cream; whipped
Ground cinnamon
Recipe by: Spoonbread & Strawberry Wine - ISBN 0-385-47270-6 In a
large saucepan combine the chocolate and sugar with the hot water.
Bring to a boil, stirring for 2 mins. Add milk, and continue heating.
When hot, beat in vanilla with a rotary egg beater or whisk. Remove
from heat. Chill, then pour into a punch bowl over ice cream. For
sparkle, add club soda. Top with whipped cream and dust with cinnamon.
Yield: 12 servings.

FROZEN BANANA SMOOTHIE

Vanilla extract
Sliced seasonal fruit
Cut frozen banana into 4 pieces and cut away peel and discard. In
blender, blend banana until thick and smooth. Add a dash of vanilla
extract and blend again. Scoop out and serve with fresh sliced
seasonal fruit.

Amaretto Coffee

1 1/2 teaspoons Instant Coffee Crystals

* Dessert topping should be in a pressurized can.

In a nonmetal mug stir together water and instant coffee crystals.
Micro-cook, uncovered, on 100% power about 1 1/2 minutes or just till mixture
is steaming hot. Stir in Amaretto. Top with pressurized dessert topping.
