DRIED BEEF CHEESE BALL

2 - 8 oz. pkg. cream cheese, softened
1 - lg. jar or pkg. dried beef, chopped finely or put through blender.
1 - tablespoon Accent
5 - green onions, chopped, tips and all
1/2 - teaspoon garlic salt
Mix cheese, Accent, onions, garlic salt and part of the dried beef, saving enough to coat cheese ball when mixed. Roll into ball and coat with remaining dried beef.


PIZZA PIE CRUST

1 - pkg. yeast
1 1/4 - cup warm water
3 1/2 - cups flour
1/2 - teaspoon salt
Mix yeast with warm water, then add dry ingredients mix well. Let set for 1/2 hour, then proceed with your favorite ingredients for pizza. Makes one pizza.

GLAZED SWEET POTATOES

2 - pounds medium sweet potatoes or 2 cans (18 ounces each)sweet potatoes, drained
1/4 - cup butter or margarine
1/4 - cup maple-flavored syrup
1/4 - cup packed brown sugar
1/4 - teaspoon ground cinnamon
If using fresh sweet potatoes, place in a kettle; cover with water and cook, covered for 25-35 minutes or just until tender. Drain; cool slightly. Peel and cut into chunks. Place cooked or canned sweet potatoes in a 2-qt. baking dish. In a small saucepan, combine butter, syrup, brown sugar and cinnamon; cook and stir until mixture boils. Pour over potatoes. Bake at 350 for 30-40 minutes or until heated through. Yield: 8 servings.

CREAMY BANANA PUDDING

1 - (14 - ounce)can Eagle Brand Sweetened Condensed Milk(not evaporated milk)
1 1/2 - cups cold water
1 - (4 - serving size)package Instant vanilla flavor pudding mix
2 - cups (1 -pint) Whipping Cream, Whipped
36 - vanilla wafers
3 - medium bananas, sliced and dipped in Realemon, Lemon Juice from Concentrate
In large bowl, combine Eagle Brand and water. Add pudding mix; beat well. Chill 5 minutes. Fold in whipped cream. Spoon 1 cup pudding mixture into 2-1/2 quart glass serving bowl. Top with one-third each of the wafers, bananas, and pudding. Repeat layering twice. ending with pudding . Cover; chill. Garnish as desired. Refrigerate leftovers.

HOT FUDGE SAUCE

1/3 - cup water
2 - squares(1-oz. each) unsweetened chocolate
1/2 - cup sugar
Dash salt
3 - Tablespoons margarine
1/4 - teaspoon vanilla extract
Ice Cream
Place water and chocolate in a small saucepan. Cook over low heat, stirring constantly, until chocolate is melted. Remove from heat; stir in sugar and salt. Return to medium heat and cook for about 8 minutes, or until thickened, stirring constantly. Remove from heat and mix in margarine and vanilla. Serve warm over ice cream.

APPLE COBBLER

Place 4 cups of thinly sliced, uncooked apples in a 13 x 9" pyrex or ovenware baking pan. Mix 1 cup white sugar and 1/2 teaspoon cinnamon. Place over apples. Set aside. In a bowl mix the following ingredients:
1 - cup white sugar
1 - cup flour
1 - teaspoon baking powder
1 - egg ( can be omitted)
1/4 - cup Crisco or margarine
Sprinkle the mixed ingredients over the apples in the baking pan. Heat oven to 325 degrees. Bake for 25 minutes. Serve while warm.

LOW CALORIE DRESSING

1 - cup low-fat yogurt
1 - tablespoon orange juice
2 1/2 - teaspoons grated orange rind
1/4 - teaspoon salt
1/2 - teaspoon prepared horseradish
Combine all ingredients; mix well.

7-UP SALAD

2 - small boxes of lemon jello
2 - cups boiling water
2 - cups 7-UP
1 - can crushed pineapple
Bananas
Miniature marshmallows
Put in pan and let set in refrigerator.
Cook until thick:
1 - cup pineapple juice
2 - tablespoons flour
1/2 - cup sugar
1 - beaten egg.
After it thickens add; 2 - tablespoons butter
1 - 3 oz. pkg. cream cheese.
Let cool. Spread on jello. cover with Dream Whip and (chopped nuts

BROCCOLI BAKE

Put in (13 x 9 x 2") pan.
1 - small bunch broccoli
1 - large container cottage cheese
6 - eggs
Beat eggs and add cottage cheese. Pour over broccoli, salt and pepper to taste. Bake for 1 - hour or until done at 325 degree oven. Serve warm or cold.
May have other cheeses for flavor before baking, such as Parmesan or Chef's Delight or Velveeta, etc. serves 8.

BAKED BEANS

2 - cans (no.2)pork and beans
1/2 - pint whipping cream
1/4 - lb. margarine or butter
1/2 - cup catsup
3/4 - cup brown sugar
Mix together. Bake at 300 degrees, for 2 1/2 hours, stirring occasionally.

BREAD PUDDING WITH SAUCE

6 - medium eggs
1 - can condensed milk
1 - cup Homogenized milk 1 1/2 - cup sugar
1 - teaspoon vanilla
1 - teaspoon pumpkin pie spice
Mix eggs and milk together. Add sugar, vanilla and spice. Break buns in large size pieces and add to milk mixture. Pour into a buttered 13 x 9 1/2 x 2 1/2" metal pan and dot with butter. Bake 45 minutes in a 350 degree oven.
SAUCE:
1 1/2 - cups sugar
4 - tablespoons cornstarch
1 - cup condensed milk
1 - tablespoon butter
1 - cup homogenized milk
1 - teaspoon vanilla
1 - teaspoon pumpkin pie spice
Mix cornstarch and sugar together. Add milk and cook until bubbly and thick. remove from heat and add vanilla, spice and butter. Pour over warm bread pudding. Makes 12 large servings.

FRESH BERRY COBBLER

1/4 - lb. butter (1 stick)
3/4 - cup sugar
2 - teaspoons baking powder
4 - cups fresh berries
1 1/2 - cups flour Preheat oven to 375 degrees. Melt the butter in a long shallow baking dish. clean berries; add 1 - cup of the sugar and gently toss to coat evenly. Mix together the remaining sugar, flour, baking powder, and milk. Pour over melted butter, DO NOT STIR INTO BUTTER. Pour berries over surface of batter, spreading evenly. Bake for 40-45 minutes. serve warm with vanilla ice cream. Serves 6-8

TWICE BAKED POTATOES

4 - large baking potatoes
Bake until done. Scoop out insides. Mix the insides of the potato with:
1/2 - cup of sour cream
3 - chopped green onions(fine)
1 - teaspoon salt
pepper to taste
1 - teaspoon hot pepper sauce
1/4 - cup shredded cheese(colby or your preference)
Mix well and fill potato shells. top with extra cheese and green onions. Bake at 350 degrees for 10 minutes or until cheese is melted. Garnish with extra sour cream and green onions. makes serving for eight.
